If you follow me on Instagram then you know that I occasionally post meals that I make for my family using the hashtag #MCSintheKitchen.  These aren't meals that showcase  my full cooking talents but rather quick and easy meals that are super delicious and easy to make for your family.  Occasionally, I have been asked to post the recipe and I am so not good at following up to these requests all the time so I do apologize if you've asked and I didn't deliver.  Trying to deliver these recipes in an IG post isn't easy and I don't know why I didn't think to just post these recipes on my Blog before.  Anyways, I will try to follow up my meal posts on IG by sharing the recipe here on my Blog from now on.  Below is the recipe for the dinner I made last night, March 1, 2015.



Garlic Chicken Breasts and Homemade Avocado Sauce (Feeds a family of 4)

2 Large Chicken Breasts Halved/Butterflied
1 Teaspoon of Minced Garlic
Mrs. Dash Garlic Seasoning
Pepper
Thyme
Paprika
Adobo

Use these seasonings to flavor your chicken to your liking.  You can also use salt if you like.  Once fully seasoned, place chicken in a covered dish/container in the fridge for at least 2 hours.  While we wait for the chicken, start preparing the Avocado Cilantro Sauce.

1 Large Avocado
1 Cup of Cilantro
1 Lime (juiced)
1 Tablespoon of Olive Oil
1 Cup of Chicken Broth
1/2 Teaspoon of Salt
1/2 Teaspoon of Pepper
1/2 Teaspoon of Mrs. Dash Italian Seasoning

Combine all these ingredients in your NutriBullet (or food processor).  If the sauce is too thick, loosen it up with a bit of water since you've already used chicken broth.  Once you get the sauce to the consistency you want, place it in an airtight container and let chill in the fridge.  Time to get back to that chicken now!

Using a large pan, add about 1 Tablespoon of Olive Oil and turn the heat on Medium High.  Since your chicken breasts have been halved, they will cook fairly quickly.  Depending on the size of your pan, place two chicken breasts down and let them brown for about 5 minutes on each side.  Keeping the heat high will allow the meat to brown really  nicely while cooking.  Should you need to cook your chicken further, lower the heat after the first 5 minutes to allow for a thorough cook.  Once chicken is done, let sit for a few minutes before cutting.

Plating:

Take 2 Tablespoons of (your now chilled) Avocado Cilantro Sauce and spread that on the plate as your base for the chicken.  Slice your Chicken Breasts into strips and place on top of the sauce.  This allows for the plate to remain pretty and neat while allowing the chicken to marinate in that sauce.  Finish adding the remaining sides to your plate and ENJOY.
